I manage the restaurant side of the business. I control the standards of service and the waiting staff along with quality control of the food leaving the pass. I make floor plans and take bookings for the business. I also work the day to day tasks at the bar where I have to serve food, make cocktails and coffees.

I managed the day-to-day running of a small bar in Wigan town centre. I was in charge of advertising, standards, stock control, team management, paper work and meeting licensing demands. This was a project where the previous owners had ran the venue into the ground. I managed to turn the public opinion around for the Wiend and we noticed an increase over the time I was there.

I ran The Association located in Burton upon Trent. This was my first general manager role and I enjoyed it very much. This venue had an average turnover of one million pounds per annum. It consisted of a 30 staff members ranging from bar staff, cleaning staff, assistant manager and door staff. It taught me how to control and support a team correctly and how to run a business. I managed to get the venue lower on the police rankings for incidents in licensed premises. I developed a strong relationship with the local police force and licensing team, as I believed it was vital to work alongside them when working in a late night venue. I noticed an improvement in takings during the large nights like bank holidays due to focusing on making the venue as safe as it could possibly be, during a time where night crime was all over the news, people would come to Association for a safe and fun night. I was also tasked with teaching an inexperienced assistant manager and training him up to general manager level. He eventually received a promotion and is successfully running his own venue within the company.

I worked my way up from being a part of the promotion team at Jaks (nightclub) and Mortimers (bar) in Wigan. I learned how to communicate with different types of people doing this job and became very competitive to become the best within the promotion team. As I worked my way to deputy manager, I was in charge of training new staff. I enjoyed teaching and showing staff the ways I had been taught myself. I enjoyed creating themed nights for the nightclub and thinking of different ways we could use the standard nightclub advertising tools at our disposal. I also got first aid training while I worked in Wigan. I found out that there was a promotion to general manager going at another venue within the company at Burton upon Trent and I put my name forward for it after many successful years in Wigan.

I ran promotions and successfully launched Evolution Nightclub. I managed all the promotions and promotion staff working for Evolution. It was my first role after university and I enjoyed the energy of it and the passion of the team I was working with. It taught me how to work with designers correctly and efficiently.
