Currently Executive Chef of Tomahawk Steakhouse Acklam Hall overseeing Restaraunt and Banqueting.Responsible for day to day running of kitchen serving 9am-9pm 7 days a week. Planning and organising for events from meetings/conferences, buffets and weddings.Responsible for rota’s taking into consideration strict wage percentage to be achieved.Stock takingIn previous Executive Chef role for the whole Tomahawk Group:- Overseeing 10 sites across the north east.-Rotas in line with wage percentage for all sites-Menu planning and development.-Menu costing.-Close relationships with suppliers to bring the best produce in terms of quality and cost efficient for the business.-Find new suppliers that will help grow the business.-Recruitment for all levels of kitchen personnel.-Staff training to improve and sustain a high level of competency in line with company policies.-Health & Safety Audits-Reporting to Directors
