o Ensure critical control points and prerequisite elements are monitored and documented and initiate corrective action as per plant FSEP/ HACCP Planso Ensure processes and the environment are monitored to meet Good Manufacturing Practiceso Review and analyze E.coli , environmental and area swabs results and follow up to ensure problems are rectifiedo Maintain and check the sanitation documentation according to established SOP’so Verify CCP’s , prerequisite and HACCP documents and records o Conduct on-site observation for pre-reqs monitors, CCP operators, monitors and verifierso Conduct building inspections and follow-up with Maintenance for corrective measures o Compliance with all CFIA CVS requirements Ensure the establishment and products comply with applicable legislation for CVS  Provide assistance to CFIA inspection staff when carrying out CVS tasks o Conduct follow-up on CVS reports to address issues o Taking effective corrective action when there is any non-compliance situation o Supervise and direct all hourly QA / HACCP employeeso Maintain up-to-date job descriptions for each direct reporto On-going training for current employees, operators , lead hands and supervisors  GMP training Meat Handling and SOP’s CVS task related re-training o Maintain up-to-date training records  Microbiology Lab/Research Technician Studentso Maintain & direct all activities in the Microbiology lab Train all students, QA technician, QA personnel  Direct all shelf-life testing, product testing, competitor’s product testing  Order and maintain lab supplieso Responsible for customer requests (eg. letter of guarantee, questionnaires)o Customer audits (eg. plant tour, documentation, corrective action and follow-up) o Complaint investigation & document response o Follow up on short term and long term corrective action plans
