Singapore

Subsequent to an initial engagement providing leadership following a 4-year major renovation (below), I was appointed to lead the Food and Beverage department, with a focus on enhancing the member experience and driving efficiencies. Notable milestones have included leading the department of 129 through COVID restrictions, and digitizing and streamlining our food safety program, recognized as industry best practice. I also launched the Uncorked program, a subscription service appealing directly to members with an interest in wine, and significantly improved member engagement and satisfaction with F&B outlets and services.

Singapore

Following several years in India, I returned to Singapore completing a number of consulting roles before re-joining The American Club with a mandate to oversee a smooth transition and re-opening of The American Club after a major renovation, with a focus on Food & Beverage, partnering with club leadership to achieve a multi-stage relaunch involving training, staff mobilization and event management. I managed the launch of the TAC2Go! Service pre-COVID, an online ordering platform for restaurants and retail outlets that helped TAC weather the COVID lockdown period.Before returning to TAC in a full-time role (above), I drove expansion and engagement of new customers for Stovve, expanding their product range with a focus on ready-to-eat foods, and led the successful upgrade to new POS mobile ordering system and an app-based loyalty program for Chili’s Singapore franchisee.

Greater Bengaluru Area

Engaged to lead growth and expansion of the parent company Habanero, I drove Bread Basket’s expansion out of Bangalore and into other India and Southeast Asia markets. I recruited key leadership positions for the company, remotely project-managing the opening of 13 restaurants across multiple markets and playing a key role in signing franchisees and JV partners to expand the business out of Bangalore. I also implemented a mature ERP system incorporating outlet POS system, HR, materials management, logistics and accounts, working closely with 3rd party vendor to manage effective implementation. I developed and launched the retail food portion of the business, which continues to grow, offering international food products.

Singapore

I was engaged to modernize food, beverage and service offerings and to begin franchising the full-service restaurants and distribution of beer outside Singapore. Accountable for full P&L, I provided transformational leadership to a large team of 200+ through 5 direct reports. I implemented a new POS system and industry-specific data-analysis program (AVERO), and secured new beer distribution partners in Thailand, Vietnam and Indonesia and oversaw the launch of 2 new restaurant franchises in the Jakarta market. Critically, I expanded training for all service staff, providing in-depth knowledge of craft beer and brewing techniques.

Singapore

Appointed to introduce contemporary dining experiences to meet members’ needs while driving acquisition in the face of increasing competition from dedicated health clubs, stand-alone restaurants and bars. Leading an extended team of 200 as Executive Chef and Director of Food and Beverage, I created and implemented a roadmap for change that included improvements to Food and Beverage offerings and initiatives to increase member usage of club restaurants. I drove major renovations, creating a new restaurant (The 2nd Floor), modernizing and expanding the buffet layout at the Eagle’s Nest and splitting the Thyme café and retail space into 2 discrete entities, Thyme café and Home, which focused on retail sales of wine and homewares. I also grew wine revenues while providing an elevated offering to deepen member engagement.
