Responsible for 4 departments and over 425+ employees, including 3 department heads and 11 other supervisory and leadership team members. $1.1 million USD midway operation consisting 18 QSR units. Full catering department generating $850,000 USD. 4 unit retail operation generating $200,000 USD. Games department consisting of 11 units, generating $120,000 USD annually. Generated revenue by developing new menus, using test kitchens with regional chefs, created new price points, promoting new combo options, offering a new “grab & go” program and creating park-wide recipe cards for quality and consistency. Introduced a new “craft beer” program by adding numerous additional taps for more variety and premium brews consisting of local and regional crafts beers along with domestic. Lead project manager in numerous CAPex build outs including expanding kitchen space, equipment and menu development in the water park. Introducing new brand concepts for two different retail outlets, along with layouts and flow of operations and new merchandise offerings. Negotiated new profit share contract for a guest mobility program.Responsible for new guest locker program. Established park-wide vending machine operation. Full Receiving warehouse & crew. Responsible for all menu development, food cost, inventory, cost control and loss prevention, AP/AR, OPex budgeting, CAPex budgeting, Annual Departmental Labor budgeting, Per Cap monitor and assessment, RPT analytics, Lead project manager in all CAPex built out projects, built all SOPs and schematics from the ground up, created hiring process, all necessary food safety & sanitation training, alcohol trainings, HR & Orientation trainings and facilitator.
