20 years of experience, 7 of those in 5 star hotels in both Cork and Melbourne. Spent the best part of a decade in Vancouver running bars. Moved back to Cork last year. There isn’t much I haven’t done in this industry, from creating personalized signature cocktail menus, overhauling service standards and implementing my own standard operating procedures, planning and executing events and all reservations and lots more. Taking the basic fundamentals of what makes the hospitality industry so beloved and sought after in Ireland, and adding into it the standards and fine tuning that only North America knows how. Balancing both to become the best at what i do.
