I worked in the restaurant industry at Bella Italia restaurants for 24 years. I mainly worked in the Back of House and consequently I enjoy cooking for others. Over the years I developed my management skills and carry out stock control, management of rotas, people and other aspects of the business and have always ensured that all food, health and safety standards have been adhered to. Despite being in my profession for so long, I enjoy learning new things. I am also interested in the Environment, health and safety sector. I have completed my NEBOSH General Certificate in Occupational Health and safety and I have previously studied Environmental Science and Environmental management at both BSc and MSc level. I worked as a sort loader for extra personnel and I learnt new experiences in a completely different work environment such as sorting freight, scanning and stacking freight in a safe manner for further transportation. I now work as a butcher at Walkers,where I prepare and clean leg and shoulder muscles for food production (sliced cooked meats and sausages)mainly in the cured butchery department. This has given me an insight into the "world of food production" and the processes which make it work.I am also a keen traveller and enjoy looking at how different people in different parts of the world interact with the environment and studying the different holistic decisions in which we all have to take to solve all environmental issues in a way that will benefit us all. I also enjoy studying the different ways in which pollutants travel through the environment and affect the human population, which has recently lead me to be interested in Geochemistry and occupational health, as this will become a more prevalent subject as far too many people are still suffering from work related diseases and conditions, thus studying how these conditions affect people, how they start and how they can be prevented is of great interest to me.
