Mycoprotein Production Project: - Characterize nutrient profiles of dairy byproducts including whey permeate and DLP as sources for media through measuring total carbon and nitrogen concentrations- Determine conditions to optimize production of fungi including sugar concentration, mixing speed, and spore inoculum concentration- Cultivate fungal growth in 2L bioreactor and analyze size of fungal pellets and yield of biomass

CPS-Waxing Brush Cleaning Project: - Extract brush fiber from industry wax-coating cylindrical brushes including nylon and horsehair / PSE mix - Dip brush fibers in various food-grade waxes to observe affinity of fiber to wax using mass retention curves - Rinse brush fibers with industry provided cleaning solutions using methods of soaking, shaking bath, and ultrasound to compare cleaning efficiency - Identify wax built-up issue with end-of-life brushes and provide effective cleaning methods to prolong brush lifeProtein-Based Coating Project: - Employed gelatine and soy protein as coating material for reusable safe food packaging to create antimicrobial functions and prevent formation of biofilms- Formulated different concentrations of protein and tannic acid as cross-linking agent to coat LDPE strips- Simulated environmental conditions to test mass retention rate and charged rate of chlorinated films including refrigeration and washing

- Create program newletter and handle social media posts- Assist with Partnering of Pal program students - Assist with other event planning and miscellaneous tasks such as answering emails

- Worked on the alternative enzyme project to find a potential candidate to replace current enzyme used in PCR testing kit for sexual heath infections in urine and finding solutions to overcome inhibited enzyme activity- Did extensive experimental planning for running PCR reactions on LightCycler and bio-analyzing sample results - Used optimized results from benchtop reactions on company devices for correlation comparison

- Working shifts ranging from 6 to 9 hours and 12-15 hours per week - Serve orders, make/take phone calls, cashiering, and making drinks as main responsibilities - Effective communication with co-workers, mananger, and customers
