Responsible for making sourdough laminated pastries such as various croissant and danishes

Best known for its novelty and event cakes, Velvet Lane is a much-heard name in GTA, Ontario. My role in the company was that of a baker, which involved baking cakes, cupcakes, choux, croissants, cookies, macarons and making buttercream bases. I was also responsible for setting up the morning cafe and making sure the products and the retail were fresh and as per the SOP.

Potel et Chabot is a catering company best known for catering high-end events including but not limited to Rolland Gras, hosting King Charles and soon Paris Olympics 2024. As an intern, I had a chance to work in 7 different departments including- Biscuit, Tour, Ice Cream, Tart et finition, Entremets, Chocolatarie and Petit Fors.
