Built in 1836, as a distillery, the site boasted several successful distillers, none more do than Johnnie Walker & Sons who owned the site for 20 years distillery peated malt for their blends. When they left it’s fell to the farmer until Professor David Thomson and Teresa Church, with the help of the late Jim Swan renovated the stunning sand stone structure, and started producing spirit again in 2014. Seven years prior to joining Heston Blumenthal at The Hinds Head I survived some succesful years on my own in the industry, 3 years in Can Pastilla, Mallorca with my 'International Tapas' bar and restaurant and then 4 years of leases with Enterprise Inns Plc, in Brighton and West Sussex, UK.
