As NCB for the Costa Concordia Retrieval Project for Dalby Offshore on a Dutch Barge called Conquest MB1, I work as part as a 3 month contract. It was my responsibility to bake fresh bread, biscuits, cold and hot dessert aswell as preparing my own meals during the night shift including defrosting my own meats. I am also incharge of keeping the meal records updated and making sure HACCP was completed at all times. My previous position as Day Chef for Dalby on the ASV Pioneer involved working in Italy on a 4 week on, 4 week off rotation still apart of the Costa Concordia Retrieval Project. It was my responsibility to manage the kitchen professionally, catering for up to 130 covers per service, and making sure that food is produced at the highest of quality. I also ensured that food and hygiene protocol is carried out at all times and that there is no wastage of food, whilst thinking of creative ways to use up leftovers. In catering for such a large workforce, it is inevitable that there will be some special dietary requirements, and I always endeavour to provide alternative dishes that meet the same high standards that are expected. It is also my duty to take stock checks, order stock and ensure that we work within our budget. Extra duties that I am charged with include the roll call at muster stations during drills/emergencies and assisting the Medic in medical or first aid emergencies.
