Having taken over as Executive chef in 2011, of this prestigious company,have a multitude of roles, which require a range of different skills. Principally, I am responsible for the day to day running of all food aspects of the company's outside catering, the development of menus for a wide range of events and pre - packed foods for the company's delicatessen, talking to customers and liaising with clients, food hygiene and safety, kitchen HACCP, product testing ( BRI campden ), stock taking, menu costings, research of suppliers, logistics, private dinning ,development of cooking processes such as sous vide, being part of a team to tender for venues and over seeing our contracted venues.

During this time I worked for Rational UK, demonstrating on how the SCC can benefit companies all over the country. I also gave live demonstrations of this product at hospitality .I also worked for Frima UK with a similar role as above. I was part of a team of chefs working at Millenium Stadium Cardiff, Ryder Cup Ireland and British open Liverpool where I was in charge of cooking and dispatching food to various outlets around the stadiums .I also worked for my present employer Aubrey Allen during this period.
