. I got my start as a Dishwasher with The Original Pancake House and worked my way to General Manager at the young age of 21. I was brought on to run the “most profitable in the company” Potbelly Sandwich Works. The store became a “Training Store” and all of the managers that I trained became General Managers. I was there for over 4 years until the concept was bought. I transitioned to be the General Manager of the Corner Bakery ($10k daily). While there, I increased Catering Sales by 150% and reduced food cost by 2%. I was there for over 4 years, until Brinker sold it. I left to take a position as the General Manager of Panera Bread. While with the company, I introduced “breakfast” to the concept. In addition, he turned the store into a “training” store. Once again, the concept changed hands and he decided to try a different industry. He missed it too much and ended up as the General Manager of Jamba Juice. I increased the catering sales and reduced costs by 1.5% in 3 months. I did some creative things, like bringing frozen smoothies to High Schools to sell at lunch time for a large profit. Again, the concept was sold and I didn’t see an opportunity for growth. Then joined Qdoba Mexican Grill as a District Manager. He ran 7 stores in both Chicago and Florida. The company felt the competition from Chipotle and closed 70 units. Then I was transferred to Michigan. My wife and I were not happy there and we decided to move back to Chicago. I was the Director of Facilities for Eataly. He over sees the entire 63,000 square foot multi-unit concept. While I loved the concept I wanted to be working in operations again.
