I lifted the eighths of beef, broke them down into more manageable parts, cleaned them up, prepared them for presentation while managing site requirements.

While studying at the Culinary Institute of America I worked many positions up and down the valley. This includes:- Stagier- Catering Specialist- Line Cook- Field Hand- Crush Assistant- Front of House leader- Wine education

I lead the first season of the American Football team in Joinville, Brazil. I brought in recruits, staff, trained, and built the foundations for years to come.

I lead the efforts to an Italian Super Bowl Championship by literally leading the charge. I built the offensive and defensive line and kept nimble, motivated, and set team records in rushing yards and least sacks. Check out Playing For Pizza by John Grisham.

I mainly stuck to the practice squad and did play in 3 pre-season games. Afterward, I had tryouts with a number of other teams before hanging up my helmet.
