Project phase to operational status venture - Designed beverage operation, oversaw construction, developed food, beverage, events & site tours product, trained service & management team and oversee ongoing F&B development for a 120 cover restaurant & heritage restoration project in the Seychelles. La Plaine St. Andre, a plantation house who's foundations date back to 1792, opened to the public in April 2011. The site houses an operational rum distillery, modern Kreole restaurant, vintage rum bar and stunning garden grounds, filled with ruins from the original annexed buildings. The operation caters lunch & dinner, private dining experiences, weddings, 300 pax canape events, buffets for up to 150 pax, cooking & cocktail classes, historical site & distillery tours, guided rum tasting sessions and business meeting facilities.
