My role encompassed buying and management of the entire properties’ beverage selection and staff training across all 5 major outlets at the hotel, as well as for in-room dining, weddings, conferences & events. I was responsible for beverage costings & pricing in all outlets, dealing with 87 merchants and distributors as well as direct-with-wineries to sustain a wine program of 600 selections, stocking and maintaining the cellar, customer liaison, business development, event hosting, food and wine matching. Accomplishments: • Led IHG Australia-wide preferred supplier wine buying agreement 2018 – 2020. Wine & Beverage professional currently buying, dealing and liaising with merchants and distributors as well as direct with wineries to run an awarded wine & beverage program of over 600 selections.• Established and setup Balthazar Wine & Dining from its inception plus designed and independently implemented the entire 500 wine & general beverage selection. • Achieved immediate Australia Best Wine awards: 2017 = 2 glasses. 2018 = 3 glasses. Based at Balthazar Wine & Dining & reporting to the Director of F & B , I work alongside our culinary team lead by Executive Chef Jean-Marc Heussner and his Executive Sous Chef Jason Woods who oversee a brigade of 20 chefs.
