Managed Scheduling and Commodity Purchasing

Responsibilities included managing fresh cutup and portioning, purchasing fresh commodity protein, and scheduling finished goods production for par-fry and IQF lines.

Managed the processing operations of a case-ready poultry plant on one production shift. Managed two unit managers and ten production supervisors. Oversaw the weekly slaughter, processing, and packaging of 600,000 broilers which produced 2.75 million pounds of case-ready and bulk-packaged poultry.Worked in conjunction with the USDA, QA, Food Safety, Maintenance, Refrigeration, Accounting, Sales, and Shipping departments to produce the highest quality product for Costco, Publix, Sams, and Super Value stores.Coordinated the plant go-live to SAP for the production and inventory functions of the plant. Made changes to correctly report staffing in the new SAP organization and cost center structures. Resolved payroll, costing, inventory, and product consumption issues. Developed inventory procedures which reduced monthly variances reported for Sarbanes-Oxley compliance.Developed forecasted production scheduling which reduced Saturday and overtime production. Directed changes needed in SAP to set line times for all employees to eliminate punch-to-punch clocking, saving thousands of overtime dollars. These and other initiatives cut overtime by more than half. Served on the team to design and implement a no-fault absenteeism policy. Designed tracking spreadsheet to manage the system for over 1300 employees. The average daily absentee rate was reduced from 4% in July 2008 to 1.4% in February 2009.Managed the continuous improvement technicians working in the plant. These workers monitored production defects to control process wastes and yield losses. These initiatives helped increase the plant whole bird yield by 2.84% of total live pounds and debone breast yield by 1.21% of live pounds. Consistently placed in the top 25% of Agristats in Labor Cost, Line Efficiency, Yield, Value of Yield, and Birds per Man-hour as compared to industry case-ready and tray-pack plants.

Second Processing Unit Manager responsible for the production and shipping of all fast-food, whole fryer, marinated rotisserie, and fresh cut-up products. Managed eight supervisors and 180 hourly employees on one shift of production and two shifts of shipping. Responsibilities also included the packaging and spice warehouse, tub wash operation, and in-house laundry facilities.Produced marinated, aged products for the fast-food fried chicken market. Customers included Kentucky Fried Chicken, Church's, Popeyes, and Mrs. Winners franchises and privately owned stores. Produced marinated rotisserie chickens for Safeway stores as well as bulk-packed cut-up, whole bird and fryer orders for other Gold Kist plants. Filled orders for the USDA CNP program and MRB further processed WOGs for cooking plants.Assisted the corporate IT department in developing a company-wide inventory and shipping software program. Developed procedures and reports for accurately scheduling production based on real-time production and inventory scanning. Successfully implemented the system allowing for distribution throughout the company. Reduced 2nd processing OT to less than 3% of total labor hours. Consistently placed in the top 25% of Agristats in plant labor cost. Served as the Interim First Processing Unit Manager. Managed three supervisors and 65 hourly employees. Reduced USDA non-compliance records by 71%. Consistently placed in top 25% of Agristats companies in Birds per Man-hour, Line Efficiency, and Overtime Percentage.

Served as the Endeavor for Excellence Specialist for the continuous improvement of processes in a tray-pack processing poultry plant. Developed and implemented a plant-wide incentive-based process improvement program. Improved plant yield for whole birds and parts by more than 1.84% of total live pounds which reflected over $3,000,000 additonal annual revenue.
