• Train and develop staff members, interns, and general managers throughout all five locations• Manage a diverse staff of 15-20 employees at main location of Water Tower, and around 40 employees total at all locations• Led a team responsible for making a $55k sales goal for the week ($14k over projected) and maintaining 12.5% labor- best sales and labor percentage in restaurant history• Part of a management team responsible for a $236k month - highest in restaurant history, an over $80k increase from the prior year• Setup, work, organize and assist in festivals and catering events (Lollapalooza, Taste of Chicago, catering events)• Responsible for prep lists, ordering, as well as many other general manager responsibilities
