A self employed restaurant owner in a small sea side town on the West coast of Ireland basically does everything. From cleaning the toilet, stacking shelves, sweeping the floor, the accounts, staff recruitment and training, ordering, stock control, health and safety, veg prep and so on. After a successful 10 years, I rented out the restaurant. I gained many practical skills, a lot of knowledge in health and safety at work, control of substances hazardous to health, employment regulations, food hygiene and gained confidence in dealing with the general public. I learned how to juggle the different needs of the kitchen, the staff, and the customers to create a smooth service and a convivial atmosphere.

Starting as a student nurse in the NHS, I worked in all areas of general psychiatry and spent some time on a forensic psychiatry unit (as a staff member!!). I went on to specialise in working with older people both in hospital, in a specialised nursing home where I was employed as the Deputy Manager but managed due to the long term sickness of the manager. I took 2 years out to travel and live in a different country where I worked privately for older people and also for a nursing agency.
