I have many years of experience I worked at the famous Fulton fish market in New York City there in my early years I learned the craft a fishmonger I learned how to fillet fish open clams and oysters and cook all varieties of species of seafood utilizing his knowledge of textures and flavors then I moved into New Jersey started a family and worked at famous Perona farmsI utilize my planing skills and help Kirk pursue his dream to have the world's famous smoked salmon where this product was distributed to all the famous hotels in the New York City area Washington Boston California and so on I won numerous awards in my cooking ability in competitions and fundraisers I managed restaurants ala carte menus scratch kitchens satellite food departments affiliated within food service catering facilities for weddings banquets and special events I was also challenged with vegan and vegetarian dishes for brides and grooms with no advance notice I'm very knowledgeable with all technical techniques and culinary arts I have advanced knowledge in textures flavors spices and herbs I'm familiar with all equipment I know how to manage a brigade of chefs through all aspects of food service food cost and inventory purchase to accomplish the daily golds I really enjoy being a chef and it's my passion I'm not afraid to take new challenges I'm always looking for new ventures I'm very young at heart strong and have a good endurance and very focused thank you best regards chef Denis viera
