My program is based on a utility-inspired fundamental research platform. A main programmatic theme emphasizes getting more from nature, guided by science, to support the development of sustainable, nutritious, and healthy foods that have high product acceptability. People generally eat what they like. Healthy food and more sustainably sourced products have limited societal impact if the population, as a whole, does not consume them. My research focuses on understanding the drivers of food flavor to address these global food challenges and their translation to modern agricultural practices (i.e. breeding strategies, production) for real-world outcomes. Specific areas of research include characterizing chemical stimuli that impart flavor to foodstuffs (olfaction, gustation, somatosensory), investigating multi-flavor interactions on perception, mapping pathways of flavor generation/stability, and mechanisms of flavor delivery. I also lead the Flavor Research and Education Center (https://frec.osu.edu/), a partnership between academic researchers and industry leaders focused on the creation, exchange, evolution, and application of knowledge to drive innovation in the food market space. In 2019 I was also appointed director of the Foods for Health Discovery Theme Initiative (https://discovery.osu.edu/foods-health), a key University organizational structure to promote optimal health for individuals and communities through scientific discovery across the food-nutrition-health continuum.
