- Selected as one of 10 interns to complete a 40-week Dietetic Internship at UC San Diego Health including a 19-week clinical rotation, a 10-week community & outpatient rotation, and a 7-week foodservice rotation. Clinical- Provided medical nutrition therapy in English and Spanish to a minimum of six patients each day with diverse medical conditions in specialty areas including diabetes, cardiac, oncology, transplant, general medicine/surgery, chronic kidney disease (CKD), surgical intensive care, critical care, and medical intensive care.- Selected, monitored, and evaluated 2-4 complex enteral and parenteral nutrition regimens for patients of different ages and health status daily.- Educated inpatients on dietary modifications and self-management for diabetes (carb counting), heart failure (heart healthy diet), cancer, ileostomy, CKD and weight management in both English and Spanish. - Applied evidenced-based guidelines by screening and assessing patients, identifying nutrition diagnoses, and determining their individual nutrition needs. - Conducted over 50 nutrition-focused physical exams (NFPE) and incorporated findings into nutrition assessments.- Attended patient care rounds and discussed nutrition-related concerns with physicians, registered nurses, social workers, and speech therapists. Community & Outpatient - Provided nutrition education and recommendations in Spanish to an underserved patient population at the UCSD Student Run Free Clinic.- Assisted the lead Dietitian at the UCSD Diabetes and Pregnancy Program to provide nutrition education following the “Sweet Success” guidelines to women with gestational diabetes.- Counseled patients at WIC by presenting nutrition classes and creating culturally relevant nutritional materials. - Delivered nutrition education classes to over 120 fourth graders about sugary drinks at the Coronado School District. - Taught patients about the renal diet in both English and Spanish at the UCSD Dialysis Unit.
