We received our Federal Distilling permit in 2008 and State & County approval in 2009. Palm Ridge Reserve, Handmade Micro-Batch Florida Whiskey has been on the market almost 10 years. Our distillery is located on our farm near Ocala. We measure the grains for our fermentations by hand, when ready we distill the mash in a 60 gallon reflux column still. The process takes 10-11 hours and yields 6 to 7 gallons of premium whiskey. We use small 5 gallon charred oak barrels to age our whiskey. Our bottles are filled one at a time & then 4 labels are applied...all by hand. Palm Ridge Reserve is truly handmade by us. In addition to our award winning Palm Ridge Reserve, 2014 saw the release of our award winning Palm Ridge Virgin and Palm Ridge Rye. We will release the new addition to the Palm Ridge family of whiskies "Palm Ridge Golden" already award winning at the ADI, wheated whiskey around the middle of May 2018. "Golden" is a soft, easy drinker with a touch of spiciness.
