Beer Without Borders is the craft beer passion project of DR Andrew Pearson. The project looks to connect brewers from around the EU with those in the UK. At the beginning of 2020 Beer Without Borders opened Riverside Tap, a taproom which allows customers to experience some of the most special craft beers from around the EU. September 2020 seen me hired as bar staff at Riverside Tap, with me quickly promoted as the Bar and Events manager for Beer Without Borders and Riverside Tap. My responsibilities as bar manager for riverside tap included creating and updating standard operating procedures for the site, training of staff, up keep of bar and cellar, and the opening and closing of the site. Unfortunately, due to COVID 19 my events role had yet to properly begin. During January 2021 lockdown Beer Without Borders decided to launch an online bottle store. I played a key role in the making of this store even though this is the first time I have ever done something of this nature. The store seen me creating a full product stock list, from stock photos to pricing, adjusting the site layout to be user friendly, to some very basic computer coding.

Bob and Berts is a coffee and food chain from Northern Ireland with various stores based in Scotland. Working as a supervisor from the Dunfermline store my duties included the opening and closing of the store. During opening a full set up of the store was required from counting the safe and tills, receiving daily deliveries, set up of coffee area, set up of deli, daily checks of the store and making sure all staff members were aware of their responsibilities for the day. Closing of the store included cashing up of the tills, updating daily banking spreadsheets and making sure all cleaning and closing procedures and tasks were completed by counter staff, kitchen staff and KP staff. My responsibilities further included daily ordering of dry stock and wet stock for the kitchen and the counter. Daily lodgements to the bank were also made when on the opening shift of the store. During my time at Bob and Berts I was able to expand my knowledge and ability of making coffees and I am know fully confident in the making of coffee. I was further able to add to my knowledge and capability of management responsibilities and procedures in the hospitality industry.
