We also operated the adjacent pub, increasing the dining revenue and providing a regular calendar of events that included film nights, cabaret, music, literary events, comedy and awareness campaigns.

I continued to fulfil my role as Stefano's assistant, but now as a joint proprietor and director of Stefano's Restaurant, the Avoca restaurant (paddleboat on the Murray River), Stefano's Cafe Bakery, Preserves, Cellar Door and Bar, and Gallery 25 (an artist-run space featuring monthly exhibitions adjacent to the cafe).
