Kona Home Care Services provides support to home care agencies that allow Owners to reduce involvement in the operations of their practice without sacrificing their ownership, their numbers, or their staff. Leveraging the economies of scale built for Kona Medical Consulting (KMC) and Kona Home Care Services (KHCS) MSOs, we extended our financial team to another entity called Michigan Bookkeeper. Since we were already managing Physician's real estate through KMC, managing staffing agencies for KHC, acting as a white-label bookkeeper for various CPA firms, etc... it seemed reasonable to allow other industries to directly hire Michigan Bookkeeper. Instantly we started managing the books for small single-owner businesses and a few large umbrella corporations with 10+ businesses underneath.

Just before my arrival it was a glorified deli with 10 seats. -Developed a bar program that introduced late night sales as well as a 50/50 food & alcohol sales ratio (originally 90/10). -Developed an aggressive marketing strategy which helped make us a destination restaurant within a 80 mile radius. -Trained owners' son how to be a GM with skills such as payroll, menu construction, inventory, scheduling, general compliance, financial analysis, etc.... -Taught mixology classes, formal wine courses, and other such events.(Under Hospitality Alchemy return to sole-management agreement)

Mid-sized restaurant group based mainly in Lansing and Grand Rapids. Operates with unbelievably low costs such as 13% labor including salary and a food cost that teeters about 15%. Manages the feel and appearance of a high end establishment. -Helped make TAVERN ON THE SQUARE in Lansing return to a profitable status as GM.-Opened the flagship TROPPO and operated it successfully as FOH Manager. -As Group Manager I participated in selling THE POST, acquiring TAVERN ON THE SQUARE in GR, reinventing an old concept as EDMUNDS, as well as implementing payroll systems, multi-concept paperwork, p&l’s, and ordering/receiving.-Grew a two concept group into a seven concept monopoly. -Transitioned a single floor restaurant into a three floor monster that could turn 1,000 guests per day easily.-Executed a catering system that worked out so many exclusive contracts that we had to create a separate business to organize the books. We originally operated out of a single kitchen but eventually had to create our own just to keep up with the 2-5 catering jobs per day.

A fine dining restaurant that catered to a very busy tourist town done in the Italian bistro style. Huge wine list, bar crowd at 10, open kitchen and countless private dinners. One of the best downtown restaurants of Traverse City during its time. It was renowned for being an approachable restaurant that would serve all demographics throughout the day. The restaurant was built to sell. -Designed the beverage menu and participated in the food menu. -Trained the FOH staff. -Moved onto become the General Manager after two years.-Created a private dining focus that allowed us to sustain the long winters without a break in sales. -Gave birth to a catering concept that was managed under-the-table by the Sous Chef and I. -Sold restaurant three years ahead of schedule.

Transitioned a group from owner management to hands off management. Improved the level of service from casual dining to fine dining. Created a catering business that brought $400k the first year. Removed the convoluted identity (fancy bar, fancy wine, fancy tapas, etc...) by consolidating to a single identity: Mid-century Fine French Restaurant. Took a single restaurant intent on expanding into a full sized group by creating a foundation by which the rest of their properties could grow. Jellies was my main project but there were two other restaurants we created during the same time. The concept was a hip Asian/French fusion restaurant with a focus on a stunning bar (complete with jellyfish) and a view of the river. First year gross sales were approximately $1.6M and second year sales were at least 30% higher. My role included all aspects from hiring training front of the house staff and menu design to floor design and bookkeeping. (Under Hospitality Alchemy design agreement)

Ultra fine dining with an average dinner for two priced around $600. We operated under the Fernand Point restaurant philosophy. This restaurant was considered the finest restaurant in Michigan for 12 years and won countless rewards. -Endless bottles in the wine cellar were managed by me thus I had to develop an inventory system that could accommodate such a complicated par system. -Learned much about food and alcohol as well as effective management styles. -Worked with two Michelin 2 star chefs. -This is when the game got serious for me.-Trained service staff (and was trained by service staff) on the proper execution of fine service that was capable of passing Michelin quality tests.

We offered events, intelligent entertainment, and sophisticated celebrations. -Operated and directed the tasting room.-Learned the ins and outs of wine production and distribution.-Met with the owners to share insights from clientele. -Managed the Key Performance Indicators that dictated the ebb and flow of my department.

This was an annex to the towns most popular and high end restaurant the Bluebird, which I also performed some management duties at. -Ensured the steps of service were executed and maintained. -Expedited most nights while managing the floor.-Routinely worked 18 hour shifts 6 days per week during the height of tourist season to guarantee the owners a smooth operation that maximized revenue.
