My journey with Coquette and Urban Food Group was an awesome experience in my career! I had cooked for many years up to this point but had never challenged myself to working in a "real" kitchen. So what else better to do than to throw myself into the unknown and challenge myself with French cuisine inside of a brigade system! As Chef de' Partie I was in charge of all saucier work(stocks, sauces, soups) and leading the line through services. I seemed to impress Chef de Cuisine Ian Sullivan/Rob Bland and Executive Chef Jeremy Sabo as they gave me a large responsibilities including menu planning/design. Outside of working at the brasserie I would help Urban Food Group with their frequent banquets at The Raleigh Women's Club. I truly treasured this learning experience as it was a turning point in my career.
