Modern Australian cuisine is served in a casual fine dining atmosphere, with an emphasis on very high quality food, drink and service without the trappings of traditional silver service. Allowing staff to fully engage with patrons creates an environment where fast, professional service is as important as the friendly, familiar environment for dining and events. Responsibilities included: - Liaising with the Director and Management in order to develop and implement company-wide short-term and long-term strategies for growth and profitability. - Promoting a safe, nurturing environment for all staff in order to promote growth and learning within the company. - Management of FOH rosters and staffing to regulate staff costs while keeping staff turnover to a minimum. - Close monitoring of purchasing, costing and supplier relations in order to ensure excellent Cost of Goods on the FOH offering. - Working closely with the Events Manager and Director to book, plan and execute a multitude of different large events. - Dealing with any and all customer complaints in a timely and professional manner. - Tracking and implementing any required COVID-based restrictions while also ensuring long-term survival of the business through the course of the pandemic.

Focus for the Restaurant was close customer engagement through a shared food offering and high quality local wines, beers and spirits.The food offering was a blend of classic European dishes as well as South East Asian cuisines, using indigenous Australian ingredients and the best available seasonal produce. Their drinks list was mostly sourced from Australia - with a heavy emphasis on local producers - but also showcasing some classic, old world options as well.Service was polished, professional and fast but without the stuffiness of fine dining and instead promoting a friendly, comfortable atmosphere where customer engagement and education was paramount.
