- Responsible to head chef to provide nutritional, good, value and high quality meals, within the guidelines set by Head chef/ managers and according to menu and accepted recipes.- Ensure the highest possible standard of food at all times.- To maintain the highest levels of cleanliness and hygiene of equipment, fittings and furnishings and personal hygiene.- Maintain high standards within authorised income and allowances and control daily expenditure of messing, by controlling stock and assisting in the ordering of replenishment items and other rations.- Comply with legislation, H&S and SCE policy.- Supervise all staff, ensuring standards of health & safety, food safety and COSHH are met.- Provide cover for head chef when directed.- To undertake any reasonable request within the scope and grade of the role.

- Serve guests with drinks as required- Reconciliation of bar takings at the end of each shift- Ensure bar and seating area is cleaned after every shift.- Change barrels as and when required.- Cleaning of beer pipes when required.- Thorough clean of bar and stock area on a regular basis.- Ensure bar area secured at the end of bar licensing hours.- Adhere to all licensing regulations as specified by the licensing laws.- Comply with current opening and closing shift procedures.- Assist with the organisation and delivery of entertainment under the direction of the Activities Co-ordinator.- Provide the service of drinks under the current Weights and Measures Act.- Assist with the monthly stock take.- Any other duties as are within the scope, spirit and purpose of the job.
