Pastry production supervisor

Upscale German bakery supplying wholesale and retail orders for two locations. Daily production can range from 800 to 1700 pounds of dough daily. All croissants and Danish as well as the filling for the pastries are made from scratch, averaging about 1500 – 2000 pieces a week. Also supply our own in house catering and two other out of house catering companies along with a handful of coffee shops and restaurants as the bulk of our production. Supervise 7 employees. We have 3 shifts, 7 days a week and 24 hours a day.

Provided all bakery and pastry items for 8 outlets, for the 5 star 5 diamond Cloister Hotel and Resort, the Lodge at Sea Island and the Cottages. With over 20 functional facilities to server our guest and member daily, we could sever anywhere from 20 to 1500 or more guest at a time. We could produce 800 or more pieces of breakfast pastry daily for functions and outlets. For breads we could produce up to 1500 and over 2000 rolls a day, pulse daily breads for outlets. We set up breads for all outlets to feature as special bread items. Worked with training externs, new staff members, attended weekly catering meeting. Conduct Special tours of the kitchens with guest. Supervise up to 12 employees and was in charge of two shift.

Contemporary American restaurant and bakery relying entirely on organic ingredients mostly sourced from owner’s farm. We provided bakery items for Bacchanalia, Winner of the James Beard, Quinones, Float Away Café and Star Provisions retail store and two other wholesale accounts.
