Working at Area 31 Restaurant and Bar and Lilt Lounge at the Epic Hotel in downtown Miami. Lilt lounge is a Jazz Lounge, utilizing modern techniques, while incorporating a historical perspective. Working through many opening challenges, Lilt Lounge has taken time and energy from pre-opening operations to where it stands now shortly after opening. As a mixologist at Lilt Lounge, I'm responsible for all ingredients, bar operations, customer service, cleaning and cash handling.

West Palm Beach, Florida

Worked with the owners of the Improv, training at the new concept, Copper Blues in City Center, Downtown Phoenix. Oversaw all operations working with the creators behind the Improv and Blue Martini Group in Downtown West Palm Beach.Participated in all aspects of the opening of Copper Blues West Palm Beach, Florida. Created and implemented the Cocktail Program. Prepared Training Information for Staff. Taught the bartenders how to make drinks properly, using the mechanical pouring technique. Led the training for two weeks prior to opening. Created and participated in the development of the draft beer program, cocktail program, ordering and inventory. Hired the new staff, managed the payroll and took responsibility for all day-to-day operations. Worked with DJ, audio, and bands to create the live music programming for Copper Blues. Programmed and utilized POS Software, BreadcrumbPRO and Aloha. Created Excel spreadsheets for price comparison, costing of menu items, PNLs, budget proposals and promotional programming for drink tickets. Calculated profit and loss records. Prepared weekly financial packet for corporate office department, which consisted of weekly cash logs, deposit information, daily cash accounting forms, tip balance sheets and daily operation records. I was in charge of updating all social media (Facebook, Twitter and Instagram).

Worked as Agave Restaurant & Lounge Manager in Santa Fe, New Mexico. Inside the Eldorado Hotel & Spa, I was cross-trained to work in In-Room Dining, Restaurant, Lounge, Banquets, and Catering. Often working in several events at the same time, experiencing the dynamics of being utilized in different ways. Recorded daily operations, sales and forecasting of business levels and hotel guest occupancy. Conducted interviews and hired part of the staff. In charge of pre shift meetings, restaurant and lounge maintenance. Met with hotel event and meeting planners weekly to create and execute affairs. Attended weekly management meetings.

Worked with Beverage Director to ensure that our inventory was properly tracked using Bevinco, an Inventory Management Service, and lots of communication between departments. Setup inventory process sheets for staff coordination. Worked with outlets and their respective management to make sure events, and promos were fully stocked and items displayed. Full Beverage inventory cycle management. Beverage event work with Gansevoort, The One Group and clients to ensure guest satisfaction. Worked with servers that were responsible for In-Room Dining, Plunge, Café and Bar, Banquets, and Catering in the programming process of Micros. Assisted Banquets by making and preparing deals for identified Wine and Spirit deals. Developed the par-order-requisition system and spreadsheets for alcohol, dry Goods, non-alcoholic beverages, and specialty items.

Worked with Bar Lab/Broken Shaker owner Elad Zvi to develop Living Room bar into one of South Florida’s top cocktail bars. Helped open and make a successful outlet at the W Hotel. Worked full time at the Gansevoort and W Hotel. Opened the Living Room Bar inside the W South Beach to much publicity and fanfare. Worked with many of South Florida’s best cocktail mavens in a very beautiful new hotel.

Worked in Y Garden nightclub bar and was key member of team that opened the twenty eight million dollar club and fine dining restaurant until its first closing in 2008.Worked and overlooked the busiest bar at Y Garden that was key venue for the Pacha party during Winter Music Conference.

I was awarded the unique opportunity to go to Las Vegas and open the Wynn Casino and Resort Hotel so I had to resign.In charge of service and closing procedures during my shift. Trained under Bar Stars CEO Rick Fogel.
