Worked with Kiuchi Parent Brewery in setting up a joint venture project based in Hong Kong. The brewery featured a 30-hectoliter brewhouse, 500-hectoliter cellar and 3000 bph rotary filler. Commissioning and testing of all equipment, flavor matching to standards, establishing SOPs, maintenance and quality procedures.

Experienced with DCS and manual/technical troubleshooting of process systems, supporting continuous improvements and adhering to GMP, 5S and Safety regulations. Starker Brewery is a Malaysian founded-company with a history of brewing traditional German styled beers. The Kuala Lumpur plant was decommissioned and production was relocated to Singapore.I supported the installation and commissioning of the 20hl, 4 vessel semi-automated brewhouse of China manufacture. After my tenure, Standard Operating Procedures were in place and production was capable of supplying to both countries. Production capacity stabilized at 2800 hl / year.Highlights:Worked closely with the Master Brewer in ensuring that the system's performance met process requirements and establishing standard processes for our operations. Worked with equipment specialists in rigorous testing and troubleshooting of the brewhouse and fermentation equipment, ensuring that equipment was calibrated and fine-tuned.Trained operations team in process operations including brewhouse, cellar, equipment maintenance and packaging.Planning and scheduling of manpower for operations team of 8. Oversaw brewhouse operations.Designed spreadsheet in tracking brewhouse and fermentation performance. Supported Master Brewer in troubleshooting, flavor matching, recipe development and process improvement.Liaison between company and government bodies - NEA, AVA, MOM, Customs regarding licensing, duty payments, permits and plant expansion.Certified Singapore Customs Tradenet Declarant.Responsible for risk assessment and established safe working protocols for operations staff.

Hong Kong

I was engaged to commission and start up Hong Kong's first brewpub. The concept was to create experimental brews served up beside modern bar-tisanal food by chef Que Vinh Dang. I went on to pursue brewing education after the short assignment.Highlights:Planning of full brewery inventory from raw materials, recipes and consumables.Design of brewing spreadsheets for projecting production, material consumption and brew scheduling.Supported the commissioning and installation of the brewery - electrical, water and draft line systems.

Responsible for brewing, packaging and serving beers for Red Dot Brewhouse and all client venues. Experienced in scheduling production and maintaining stock for a high volume brewpub producing 150 hectoliters a month on a 10 hectoliter brewhouse.All operations from grain to glass, draft system maintenance.
