A common problem in our modern style of foodstuffs is that they are packaged in a variety of materials: plastic, paper, paperboard and the like. A problem with these materials is that they are often result of chemical processes for production, or contain chemicals from the raw materials, that can migrate to food. The result is a cocktail of chemicals in our food that have a direct route into the body via consumption. A fraction of these chemicals are known as Intentionally Added Substances (IAS), are well-known to be present, and have been approved for usage in food materials considering the risk they pose is not significant. A much larger diversity of chemicals is however found as Non-Intentionally Added Substances (NIAS), e.g., degradation products, accumulated chemicals or contaminations, which are never approved for use in food, let alone for human consumption.Complexity in this issue results from that the amount of chemicals capable of migrating to food in relevant concentration is enormous (50,000+). Chemical Risk Assessment (RA) investigates only the (negative) effect of a single compound, but due to the large number of unknown chemicals, assessments are not always accurate, making specific risk analysis less suitable to be applicable in practice. In truth, it is unknown what the effect is of the chemicals that fall below interest thresholds, or are simply not known to be present, while these may be capable of having adverse health effects on humans.This study aims to develop an analytical methodology, based on existing LC-MS techniques, that is capable of identifying the chemical structure of NIAS in food packaging materials, while providing an estimate concentration determined through a non-authentic standard. This method should reduce or visualize the uncertainties made in RA, or ideally improve it with an estimate of concentrations when faced with unknowns, and thereby assist in scientific risk prioritization.
