I read, I cooked, I practiced, I tasted, I brewed, I cocktailed, I savored, and I educated. Throughout my career, I endeavored to be as knowledgeable as I could, to be able to showcase the perfect Belgian lace, to illustrate the beautiful contrast of alder smoke in salmon with the supple plummy fruitiness of a well crafted wee heavy. I collected this bounty of knowledge, but now I know why. For the guest, the customer, the client. And that makes me happy.
