Key Skills:• Profit and sales leading – Calculating GP percentage for all lines to ensure profits and create effective promotions on products whilst maintaining a high profit margin.• Staff management – Creating rota’s for 20+ staff for various big sports matches and busy night time events, ensuring staff deliver excellent customer services and that standards are always met and managing front of house staffing levels.• Cash control and management – banking and accounts, cash up procedures and reconciliation including expenses for various aspects of the business.• Mood and atmosphere management – A strong ability to on the fly adapt the mood of a venue to create an enjoyable and comfortable experience for customers such as music types, lighting levels and furniture layouts for a 700 capacity venue.• Stock Management – Able to conduct stock takes for over 100 products including spirits, PPS, draught lines and food as well as ordering in line with upcoming events, promotions and bookings.• Customer relations – greeting and talking to customers, hosting large parties and delivering an enjoyable and memorable experience for large groups and being able to effectively handle any problems and issues that may arise.• Strong knowledge of licensing law and how premises licenses apply as well as applying for Temporary Event Notices for large sporting events and conducting risk assessments for each application.• EPOS – Deep knowledge of how EPOS systems work within the venue, creating different pricing levels for different promotion lead nights as well as stock management and recipe creation.• IT/Technical – Able to create Excel spread sheets to forecast revenue vs. actual as well as daily checklists, fire checks, health and safety compliance and kitchen due diligence.
