Out of Town restaurants consisted of 40 restaurant outlets mainly in big, Out of Town shopping malls.Worked with the buyer to change from Holdsworth food services to 3663 as main food supplier, which gave me an insight into the food supply chain as well as negotiation and distribution.Worked alongside the financial controller, which gave me an insight into budgets, profit and loss, cash flow and balance sheets, as well as payroll.Worked with a regional manager, which gave me an insight into the retail operations of the business at management level.I saw various levels of partial ownership and long-term contracts between Out Of Town businesses.

Bradwells ice cream is a regional ice cream manufacturer that supplies all the major supermarkets, i.e. Tesco, Sainsbury’s, ASDA, Morrison’s and Waitrose.  It also supplies international restaurants, i.e. Hard Rock Café.Worked with the managing director on a review of the business and the next five years planning.I was given specific responsibility for purchasing. I was allowed, with the agreement each time of the MD, to change some suppliers and negotiate pricing, payment and contracts.Worked with the sales team and was given great exposure to meetings including a visit to a major supermarket head office to negotiate more stores.This also gave me the chance to see the logistics side of the supply chain and how the product gets to the marketplace.Worked on the factory floor manufacturing the ice cream. As well as being a lot of fun, and hard work, this gave me a great insight into food quality control and also safety procedures and haccp. I also saw how large food retailers require audits and certain standards from their suppliers.
