Assistant ProfessorWestern Illinois University Aug 2005 - PresentWestern Illinois University - Dietetics, Fashion Merchandising And HospitalityMy role as an Assistant Dietetics Professor is to provide dietetics/ nutrition education to the dietetic majors, nutrition minors and general education students. One of the courses I teach is "Introduction to Nutrition" which is a general education course. In the dietetics curriculum, my focus is in the area of lifespan with courses including "Child Nutrition" "Nutrition through the Lifespan" and "Nutrition for the Older Adult". Current areas of interest/ focus of research include wellness programs and nutrition education in the community. Over the past several years, myself along with the dietetics faculty from Western Illinois University have mentored dietetics students in a variety of wellness projects, programs and research. With the results from the research, I along with Dr. Lorri Kanauss (Professor, WIU) have presented at numerous conferences regionally, nationally and internationally and have published several articles from these presentations.
