About Emily Lester
I am a recent graduate of Northwestern University with a B.S. in Social Policy and minor in Global Health Studies. Through my studies and extra-curricular experiences, I explored my interests in food insecurity, poverty alleviation, housing & healthcare access, community development, disability rights, rural policies, and mental health care. Overall, I am interested in how law and policy impact individuals, both internationally and domestically, and look forward to building on these interests throughout my career. Currently, I am working at Thompson Coburn LLP and getting to experience different practice areas within the firm in my role as an Administrative Support Assistant. Outside of work, I look forward to using this time before grad school to delve into my creative interests such as writing and promoting my recently published coloring book, as well as getting involved in the STL community and strengthening my quantitative background.

Co President At Northwestern University
Campus Kitchens is an organization that collects leftover food from Northwestern's dining locations and redistributes them into nutritious meals for the greater Evanston community. I had the opportunity to become co-president my freshmen year while the organization was in a unique position, post-COVID and shortly after the national organization of Campus Kitchen (which CKNU was a branch of) shut down, which allowed us to essentially start the organization over. I got to see all sides of what it takes to lead an organization and had the time to build initiatives I am proud of, while facing unique challenges throughout my tenure. Some personal highlights of mine include writing a memo to advocate for the legality of food donation and quality of our operations to the university President's office, using my interest in digital art to design one of our t-shirts, and building a new executive board to support the longevity of our work. My co-president and I were honored with the Wildcat Impact Award for Collaboration by the Division of Student Affairs, to commemorate us for our collaborative with the university, dining halls, and each other. Some specific itemss are listed below. - Overhauled organization post-COVID, implementing strategies to streamline processes and re-engage students - Conduct daily communication with university officials, community partners, and volunteers, coordinating over 8 weekly shifts to ensure seamless operations- Advocate for needs to NU Dining, Compass Group USA, and Northwestern administration, resulting in significant improvements, including addition of an app, vehicle, and a major location change- Collaborate closely with co-president to continuously revamp leadership structure for increased efficiency- Produced a memo for Northwestern’s President and VP Student Affairs to advocate for legality and effectiveness of our work to convince them to sign the food establishment license
