Dr. Donald McMahon has retired from directing the Western Dairy Center. I appreciate Dr. McMahon's many years of effort at the center and for being a co-founder of the BUILD Dairy program. Our continuing goal is to do world-class research while training the next generation of dairy technologists/scientists.
Vice President Of Industry Relations
Our goal is to develop a strong, technically-trained, dairy-passionate pipeline of young people who can enter and sustain the dynamic dairy industry that exists in the west and northwest region of the US. This work will include revitalization of the Western Dairy Center with a focus on industry-relevant dairy research which will be tied to technical training of the young workforce. The work will also connect the dairy processing industry with the regional, land-grant universities where the workforce training and development will occur.
Senior Vp Research & Development
I led, mentored and developed a world-class team of researchers focused on NPD of whey ingredients, cheese, and specialty grains. The team started in 1998 with 5 members and grew to 50 people by the end of 2015. Particular success was realized in three areas, sports nutrition, protein bars, and cheese. I also designed and delivered the state-of-the-art Glanbia Collaboration Center which includes pilot plants for whey processing, ingredient applications, and bakery. I also had significant involvement in Glanbia's Cheese Innovation Center which delivered value-add cheese products to Glanbia's portfolio.

I was an Assistant Professor for five years, promoted to Associate Professor with a focus on milk proteins and enzymes, cheese ripening and process cheese functionality. I trained eight graduate students, including four Ph.D. students, with just over 30 publications in peer-reviewed journals. I also taught Technology of Fermented Dairy Products, Food Analysis, Food Processing and Introduction to Food Science.
