Film producer, manufacturer, ento'preneur (an entrepreneur involved in the entomophagy sector), I've worn and continue to wear many hats. Our world is multifaceted and I attempt to holistically embrace this complexity as an experiential learner. As a film producer, my work centered on cultural and environmental preservation. I looked to provide a platform to First Peoples' communities to present and preserve Native language, cultural ways of understanding, and TEK (traditional ecological knowledge). As a manufacturer, I've looked inward to my family history. Walco Leather Co. was founded by my grandfather in 1943 and to this day utilizes many of the techniques and engineering that reflect the ingenuity in manufacturing of my grandfather and father. I am proud to continue to earn my livelihood on this family path. I apply my expertise in lean manufacturing now to insect processing. Coming full circle, inspired by a film assignment for the UN FAO, I became aware of the incredible potential insects hold to address and alleviate the pressure posed by unsustainable agricultural systems. As we approach 2050 and a population increase to 9.5 billion, alternative protein sources will need to be advanced to meet the 60% increase in protein demand. Peak Protein LLC is developing processing technology to increase the bioavailability and functional characteristics of insect proteins in order to optimize their workability as a food ingredient and nutritional fortifier.
