Implemented a new property management system for Hotel and Banqueting. Coordinated sales for Business and Leisure of 140 hotel rooms and 13 conference/function rooms up to 1000 pax.

Partner in flagship gastropub of “Haacht Brewery”. Redevelopment of concept and daily operations of neighborhood gastropub with a 120 seats and 200 seat patio. Created an extensive craft-beer menu and perfect serve, together with food pairing.

As pre-opening manager I’ve created the concepts and operationally set-up for 4 outlets of this new indoor ski & leisure centre.

Successfully set-up organization of recently opened 200 seat restaurant & 40 seat bar. Increased daily covers up to 500 pax on weekends. Builded a consistent sales in the cosmopolitain bar with up to 500 cocktails a night. Created a cohesive team of 30 (BOH & FOH), and management team. Devised cocktail & drinks program: including infusions, mixology, barista, specialty cocktails & rotating beer program. Created manuals and training of bar staff & servers, conducted daily pre-shift meetings with FOH & BOH.Created a strong sales growth of 35% in 2 years.Hands-on on the floor, daily operation of the business; opening & closing, hiring, scheduling, staff mentoring, maintenance, inventory, customer retention.

Shift management of high volume 240 seat, 800 covers a day, down town restaurant. Managed a team of 30 staff each shift.
