Fine Food & Two Chefs Co., Ltd was founded in late 2013 with the aim and ambition to create chilled ready to eat nutritious and well balance meals that include a suitable portions of Protein , Carbohydrates , fibers and vitamins .Our mission is to present our customers with meals that are conveniently reheated in a microwave oven , representing excellent value just like you would find in a good Restaurant . Our State of the art purpose build production facilities ensure a clean and hygienic environment . Our Brand "​ CHEF ERWIN "​ cover a wide range of dishes such as Coq au vin , steamed fish with salmon and Saffron , Salmon steak , Lamb Stew Navarin , traditional baked Lasagnas are among our Pasta dishes . 4 healthy soups have been launched recently , using only the freshest ingredients from Thailand's organic farms .A 12 days shelf life is guaranteed , kept in a chilled 4 degrees environment , rather than frozen , ensures for nutritious , fresh and tasty meals.

In charge of a large and complex operation with 8 F&B Outlets , 3 bars and extensive Banqueting and meeting facilities . Average 50 000 covers a month . Around 400 plus F&B staff . Responsible for budgeting , forecasting , yearly promotion plan for all restaurants and bars , restaurant renovations , capex planning and guest chef promotion as well as wine dinners . Involed in sales & marketing strategies , upselling programs and staff succession planning . Active in CSR programs and initiatives .

Dusit International

In 2007 i was promoted to Corporate Chef for Dusit International . In this position i was involved in all our new Hotel projects overseas and in Thailand . Overseas projects include 3 Properties in Dubai , 2 Properties on Hainan Island China , 2 Properties in India , 1 Property in Guam , 1 Peoperty in the Maldives , 1 Property in California , 1 Property in Kenya as well as kitchen and Boh renovation projects for existing Dusit properties in Thailand including all Princess branded Hotels . Involved in the culinary concept of our D2 branded Hotels . I gained valuable new knowledge and insights during workshops with Interior Designers , Arcitects , Landscape designers and restaurant consultants . My resposibilities among other was working with the kitchen consultant on Boh and Kitchen space allocation , layout , work flow and kitchen equipment selection for various restaurants . Each Hotels Restaurants culinary concept development , manning guides , OS&E lists and FF&E lists . Developed our Dusit International Kitchen Manual and involved in the development of Dusit's Corporate F&B Standard book of specification , SOP manuals as well as Minimum standard and core practises Manual . I was during this years also Executive Chef at Dusit Thani Bangkok .

Dusit Thani Bangkok

During my 7 years as Executive Chef of Dusit Thani Bangkok i was involved in the culinary development of 3 new outlets , French , Italian , Deli Restaurant . Kitchen design , trial run , kitchen team development and training schedules . Renovated during these years the entire Boh including Pastry , Chinese , Main Banquet kitchen ,Cold kitchen with all its storage and washing facilities which was a 8 month project. Also all satelite kitchens in all our Restaurants were fully renovated . ADD kitchen with washing and storage facilities was another large project lasting 4 month . Organised a large number of Guast chef promotions for all of our Outlets over these years . Was actively involved in promoting of our outlets with newspaper Interviews , Wine dinners , cooking demonstrations etc . Developed together with our Thai Executive Chef our Benjarong Thai Cook book and came up with a modern way of presenting the art of Thai Cuisine including its precise recipes .Regular catering for the Royal Family of Thailand and heads of state . Founding member of the annual Chef Charity dinner . Enjoy doing charity work for Operation Smile , The Royal Project , visiting Children Hospitals or Orphanages with the purpose of doing my share for Thai society.
