Key Responsibilities Responsible for all food and beverage production and services.Major task of reorganizing (“turn around”) the entire department after a one-year absence of F&B Department Head. Re-organized major departments to increase efficiency and staff motivation, improved maintenance and upgrade standards. Directed and controlled all day-to-day operations. Reported directly to the General Manager of the management company.Key Achievements Repeatedly the hotel had not a Food & Beverage Department Head for one year when I arrived (managed by the Executive Chef and Service Manager). My main objective was therefore to restructure the Food and Beverage department, the service and restaurant concepts and to enable the operation to be profitable. After the re establishments:Highest Yearly GOP & Revenue in F&B, record of last 5 years, since the crisis. (2003-2004 & 2005 seasons)Re opened nightclub and achieved highest revenue in this outlet.
