Producing between 70 - 180kg of hand-moulded sourdough bread, baguettes and ciabatta for wholesale customers within Edinburgh. Developed and maintained effective working relationships with Company Bakery's directors, staff, property managers and bakery suppliers. Pricing recipes, sourcing suppliers and ordering stock from preferred suppliers. Creating risk assessments to ensure compliance with all relevant health and safety procedures. Recipe development and production scheduling.

Overseeing wholesale production of, on average, 1500 litres of soup, 50kg salads and 80kg of nursery school meals per week.Introduced the use of recipe nutrition and cost calculating software to help comply with new nutritional labelling policy and accurately calculate recipe costs.

Provided safe, fun and educational activities to clients including Scottish Outdoor Education Centres and The Scout Association. Sessions were tailored towards the participants needs and expectations.

Part time role supporting the team by preparing, cooking and baking set menu items using fresh ingredients to a high standard. Receiving and checking deliveries, rotating stock. Opening and closing premises, and adhering to strict health and safety regulations including HCCP and COSHH. Ensuring the kitchen is clean and tidy at all times.

Working as part of a team of three chefs, including the restaurant owner, to create a monthly changing set menu using local ingredients.
