Sensory SommelierEm Arome™ Jun 2019 - PresentA new chapter opened for the Studio when Frey Organic-Biodynamic® Vineyards invited Eva-Marie to come to the winery as a sensory sommelier and merge the art and technique of perfumery, with the art and technique of winemaking. As Artist in Residence she would become a core member of their in-house wine group and shadow all aspects of their viniculture and oenology, following the seasons of the vines, harvests of the grapes, alongside studying the collaborative native and aromatic-medicinal plant residents of Northern California. Passionately fueled by vintners and vignerons such as Jules Chauvert, who held particular appreciation for the olfactive prowess of perfumers, delving more deeply to the ‘voice within the glass’ and listening to the smell in all aspects of the wine-making process, while developing her unique holistic sensory program Profumo e Vino - Perfume and Wine™. Recognizing and expanding the wine-tasters perception of aroma (nose), palate and finish, this program expands olfactory awareness through exercises and merging a new palette of linguistics that cross and intersect between the language of wine and the language of perfume. Sense of place, referenced as terroir and airroir, is accentuated utilizing experiential explorative of sensploration, where the sense of taste and smell are crossed, diverting olfactory neutrality and encouraging an escalated multi-sensory approach to further train and enhance our relationship with smell and flavor, scent and taste.

It became signature labeling within the services, presentations, sensory suppers, consultations and Ambassador assignments; as 'perfumer-in-house' for makers of spirits and wine.2016, exposed a unique application of cocktail perfume rimming, designed in house (2011), that went forward to win prestigious competition, specifically Bombay Sapphire 'Most Imaginative Bartender'® (USA), highlighting concepts as crossmodalism, sensploration and synesthesia. Profumiere / Direttrice R & DLa Vecchia Distilleria Oct 2016 - Jan 2019ItalyThe Studio would close for a tenure in 2016, Eva-Marie inspired to accept a exclusivity position in R&D + collaborative stewardship to LaVecchia Distilleria, The Old Distillery, established in 1856 and dedicated to a plantation caring for 300+ trees of Citrus aurantium var. amara, fiori d'arancio amaro (bitter orange blossom), companioned by rare antique roses. the area was familiar with a history of on-going collaborations, residing in the Province of Liguria, inland above the Mediterranean sea, bordering Southern France. 2012 Slow Food Italia Presidium had ignited expansive engagement in the restoration of the traditional agricultural landscape of the distillery begun in mid-1960’s and further stewardship of Éva-Marie would study and explore harvest + distillation techniques for the retention of precious molecules at ratios oftentimes lost and offering superlative olfactive + organoleptic qualities. Alongside multiple high profile International presentations, 2018 would initiate the founding of a proposed Learning Center, christened NOA, Nerolis Olfactive Arts Academy - located in the central Village of Vallebona. Renovated and designed around the family museum, it now offers a uniquely quaint and beautiful space to gather. It founded with a proposal to unite students to perfume arts to like-minded Internationally revered educators, artists and stewards - with a mission and focus of dedicated appreciation to raw materials of natural origin and fusing the linguistic landscapes of Italian and English.
