Mrs. Mika is a restaurant located in Jumeira 1 that offers modern fusion japanase cuisine. My main responsibilities include: - P & L Analysis to hit strategic targets on a monthly basis - Budget implementation to keep targets on check, minimize waste and control inventory- Implementation of a business lunch to raise the income in lunch times- Revise marketing strategies with PR team to align them with the business goal - Menu engineering to lower costs and wastage, based on slow moving items. - Food knowledge for service team to get deeper into the Japanese culture to understand the roots of the cuisine and offer the guest a more tailored experience.-Implementation of a reservations system to manage booking, gather data, and follow up with vip guests.-Steady increment of social media reviews, i.e: Google Maps, Trips advisor from 3.5 to 3.9

Around the Block is an interesting outlet that offers all day dining and that beautifully blends a breakfast and lunch menu and at night transforms into a Japanese modern eatery called Tori. Effectively delivering a casual yet elegant approach to dining.Amongst my various duties I'll highlight:- Staff training on cuisine, core values of the company, goals and visions, all of this to enhance guest experience.- Inventory control, - Audits reports with an action plan to address kpi's- Tracking sales and putting into action plans to reward highest seller- Constantly tracking EPos to control sales, discounts and APC.

As a Floor Supervisor for Chi Spacca I was in charge of:-Weekly rotas based on business requirements -Helping putting into place system to maintain service standards such as checklists.-Conduct briefing on a daily basis to discuss sales status, reward efforts and address current challenges -Conduct trainings on food, beverages and SOPs-Training on Michelin standards
