During her time living in rural Japan she was completely immersed into the Japanese way of cooking and fell in love with the Japanese diet & culture. Since returning to Ireland she loves to introduce people to the benefits of the Japanese diet and way of eating through her TV appearances, cookbook "Japanese Food Made Easy", food articles (cover of Food & Wine Magazine, Irish Independent, Irish Times) and cooking demonstrations on Bord Bia’s Chef’s Food Stage at BLOOM fusing local Irish produce and Japanese flavours. Fiona is a regular cook on the Weekend AM show Virgin Media One. Fiona has worked as a consultant/ Ambassador in countries such as the UK, Dubai and Japan.
