After graduating from Le Cordon Bleu in 2020, I began my journey in French pastry by immersing myself in the language and culture for 10 months, eventually landing my first position as a pastry cook at a bakery in the 12th arrondissement of Paris. There, I refined my skills by managing the oven and specializing in creating classic French treats like madeleines, financiers, and mi-cuits. Over the years, I have gained a variety of skills, including proofing and baking viennoiseries, assembling and decorating modern French desserts, and gaining experience in dessert production. My journey has not been without challenges, but each step has strengthened my resilience and adaptability.
