About Francois Guillaume

From starting as a bell boy trainee to becoming a Food and Beverage Director, my journey through the hospitality industry has taken me across Europe, the UAE, and Southeast Asia, encompassing roles in both hotels and restaurant companies. Now, after 7 fulfilling years in Cambodia, I am embarking on my most exciting venture yet - founding my first restaurant Hybrid Kitchen. MEP Hospitality is more than just a company; it is a vision and a commitment. It is the umbrella organization for all my future restaurant ventures, starting with Hybrid Kitchen. At MEP, we are dedicated to more than just serving food; our focus is on education and sharing a passion for the hospitality industry. Over the years, I have discovered that my true calling lies in inspiring and sharing knowledge, rather than merely managing and controlling.MEP Hospitality will guide all our projects with a clear vision for human resource management, education, and community engagement. Handling the closing and re opening of outlets depending on the covid situations. I also assisted the owner in the development of the new outlet, handling small missions of product sourcing, action plan management, requesting quotation for different part of the restaurant (Equipment, furniture, etc).

    Refurbishment and re-opening of one of the most upper class restaurant of the Khmer capital. Aer 3 years of operations, Mara needed an upgrade, a new beginning. The team worked on the new design, new menu, the creation of a wider wine selection with the installation of a wine cellar. My role was to monitor the operations during the changes, training the staff and executing a new marketing strategy. We managed to keep the same very high end Khmer customer base, increasing the average check and the daily number of covers. Increased the net profit by 8 points over 2 month of operations after re-opening.
