Responsibility for the pub at all times.Licensee of the pub and personal license holder. Organizing and overseeing a team of 15 people.Liaising with my kitchen manager to ensure excellent food standards at all times.Providing an excellent level of customer service not only from myself but ensuring the same from every member of the team.Responsible for dealing with any customer complaints and training others to deal with them efficiently in my absence. Constructing the year’s business plans and then managing the P&L accounts within allocated budget constraints whilst achieving top and bottom line targets. Manipulating customer purchasing and prices maximizing gross profit.Staff training and development. Maintaining the venue and remaining compliant with all health and safety regulations. Implementing Health and Safety and Food Hygiene procedures to ensure the best results from environmental health inspections.Making sure the pub abides by all fire and licensing regulations.

The Rose and Crown is a Heritage site within Greene King on Old Park Lane, Mayfair. It is in a prime Central London location predominantly frequented by tourists and is a local to staff from all other nearby businesses. Its busiest times were when Winter Wonderland or other events were being held at Hyde Park.

The Three Hammers is a pub in the Ember Inns brand within Mitchell and Butlers. It is a local family pub situated on the corner of Hammers Lane and The Ridgeway in Mill Hill, with a lovely beer garden at the rear. It operated under a split of 60% wet sales and 40% dry sales. It has a capacity of 200 people. We hold functions on a regular basis for funerals, christenings, communions, birthday parties etc. often providing buffets as well as sit down meals.

The Preston is a pub in The Ember Inns brand within Mitchell and Butlers. It is a large pub with a sizeable beer garden, located on a busy main road and one mile from Wembley Stadium. It operates under a split of 70% wet sales and 30% dry sales. It has a capacity of 500 people. We held functions on a regular basis for funerals, local businesses and schools, reunions, birthday parties, and charity events. Event days at Wembley create enormous extra footfall to the pub with takings of up to £10, 000 net sales in a day.

During this time I generated over 100% sales growth on last year’s figures, beaten sales targets, kept wage costs to a minimum and used my initiative to introduce new events to the pub to increase footfall e.g. live music, DJs, darts team, psychic evenings, charity nights etc. In doing this I reached level 3 profit.

Duties included: relief management, overseeing the day to day running of the bar and kitchen, managing and training the team of staff, stock-taking and ordering, organising the rotas, being responsible for the safe-keeping of the float and each day’s takings, calculating weekly figures and wages, organising special events eg. DJ and Salsa nights.
